Air fryer acorn squash is a quick and easy way to prepare this delicious vegetable. Use it as a side dish or in soups, baked goods, and other recipes that require roasted or mashed squash.
Rinse the acorn squash and remove any label stickers. Cut the quash in half and scoop out all the seeds and strings.
Rub each cut side with some olive oil and salt.
Place the squash half in the air fryer basket facing the cut side down. Air fry at 380°F for about 15-20 minutes until the flesh is fork tender. It is fully cooked now and ready to use. (I fit only one half at a time, if you sing oven-like air fryer, cook both halves at the same time)
Remove the basket and add nutmeg and other spices or sweeteners. Air fry at 400°F for another 5 minutes. Repeat the cooking process with the second half.
Notes
If it is too hard to cut the squash, microwave the whole vegetable for about 1-2 minutes to soften it up.
