This roasted sweet potato slices recipe features sweet potatoes cut into thick rounds, tossed in olive oil, salt, and herbs, and then baked in the oven until perfectly tender on the inside with crispy edges on the outside.

Instructions
Preheat oven to 400°F. Line a baking pan with some parchment paper. Wash and peel the sweet potato. Slice into thick rounds.
Peel and wash sweet potatoes well. If preferred, you can keep the skins on. Slice the potatoes into ¼-½ inch even rounds.
In a large bowl, add sweet potato slices, olive oil, salt and the rest of the seasonings. Mix until the slices are well coated. You can let them marinate at room temperature for about 15 minutes for more flavor.
Arrange the potatoes on a prepared baking pan in a single layer. Bake for about 25 minutes or until tender inside and the edges become crispy. Enjoy with your favorite main dish.
