This kid friendly chicken meatball soup made with rice, vegetables, chicken, some ghee and a hint of lemon is a healthy meal for colder days or when feeling under the weather. Very light but filling, loaded mainly with wholesome ingredients meal will become a favorite soup for the whole family.

Instructions
To make the meatballs:
Add meat, salt, herbs together and mix until well combined.
Form meatballs size of a golf ball and arrange them on a cutting board covered with some foil or parchment paper. Set meatballs aside.
To make the soup:
Dice onions and garlic and set aside separately. Chop carrots and bell pepper.
Preheat ghee butter at the bottom of the pot on a ,edium heat. Add onions and cook until translucent. Add the rest of vegetables except for garlic and keep cooking until vegetables start getting soft. Add diced garlic and cook for another minute.
Add water, bullion base, oregano to the pot and bring to boil. Simmer for 5 minutes. Add rinsed rice and cook for another 10 minutes.
Drop meatballs carefully one by one in the boiling soup. Cook for 12-15 minutes or until meatballs' internal temperature is 165°F. Add lemon juice and turn off the heat.
Serve hot in your favorite soup bowl and enjoy!
Notes
If the meat sticks to your hands, use gloves or dip hands in cold water to form meatballs.
Preferably, use small pan over medium heat to reheat the soup.
Use any vegetables you like (zucchini, parsnips, celery.
Although ghee butter is the best, use olive oil or regular butter instead.
