Frozen Butternut Squash in Air Fryer

Frozen butternut squash in air fryer is a great side dish prepared with simple and healthy ingredients. It is nutritious, delicious and so easy to make.

Equipment

  • 1 Air fryer I have Ninja XL
  • 1 set of measuring spoons

Ingredients
  

  • 4 cups frozen cubed butternut squash store bought or home frozen
  • 4 Tablespoons Olive Oil
  • ½ teaspoon salt
  • ½ teaspoon dry basil
  • ¼ teaspoon coriander
  • teaspoon nutmeg

Instructions
 

  • In a large bowl, add frozen butternut squash cubes, salt and oil. Stir to coat. In a small bowl, add measured basil, coriander and nutmeg. Set the spice mix aside.
  • Preheat air fryer for 3 minutes at 400°F. Add the butternut squash to the air fryer basket in a single layer. I had to cook it in two batches not to overcrowd.
  • Air fry for 10 minutes at 400°F. Remove the basket and add the seasoning (add half of it if cooking in 2 batches). Shake and stir.
  • Air fry for another 5 minutes or until fork tender. Serve immediately.

Notes

  • cook in 2 batches not to overcrowd unless you have a large air fryer.
  • arrange the veggie cubes in one layer.
  • add spices only for the last 5 minutes of cooking. Spices can burn easily in air fryer and will lose the potency and aroma.
  • different air fryers may have different cooking times.
