These air fryer sweet potato cubes are effortlessly delicious, seasoned with a savory spice blend and olive oil, and ready in under 15 minutes. They come with crispy edges and creamy on the inside, making them a perfect side dish for any meal.
Wash, scrub and pat dry the sweet potato. Peel it using a veggie peeler or a knife (optional). Cut the sweet potato into ½-1 inch cubes.
In a large bowl, add potato cubes, 2 Tablespoons olive oil, ½ teaspoon salt, ½ teaspoon dried thyme, ½ teaspoon dried oregano, ½ teaspoon garlic powder, ¼ teaspoon onion powder, ¼ teaspoon chili powder, and ¼ teaspoon black pepper

Arrange the potatoes in air fryer basket in a single layer. Air fry at 390°F for about 12-15 minutes tossing them halfway though the cooking time or until fork tender.

Cut the potatoes into even cubes for even cooking.You do not have to peel sweet potatoes. Use other favorite sweet or savory spices and herbs.
