Equipment

  • 2 large bowls
  • 1 Whisk
  • 1 silicone spatula
  • 1 skillet or griddle
  • 1 wide spatula

Ingredients
  

  • cups (219g) all-purpose flour
  • 3 Tbsp (25 g) granulated sugar
  • 1 tablespoon (15 g) baking powder
  • ½ teaspoons (3 g) fine sea salt
  • cups (360ml) whole milk, room temperature 1½
  • 1 large egg, room temperature
  • 3 Tbsp (43 g) unsalted butter, melted and slightly cooled, plus more for the skillet
  • 1 ½ teaspoons (8 g) pure vanilla extract

Instructions
 

  • Whisk dry ingredients. In a large mixing bowl, whisk together flour, sugar, baking powder and salt for about 30 seconds to distribute the baking powder evenly.
  • Combine wet ingredients. In a second mixing bowl, whisk together room temperature milk, egg, melted butter (make sure it cools slightly) and pure vanilla extract.
    Note: If the milk or slightly cold, butter may form tiny solid specks, It is normal and will still cook perfectly.
  • Mix and rest the batter. Pour wet ingredients into dry ingredients. Gently fold the batter with a silicone spatula just until flour streaks disappear. Do not over mix, the batter should remain lumpy. let the batter rest at room temperature for 5 minutes.
  • Preheat the skillet or griddle. Meanwhile, preheat a non-stick skillet or a griddle over medium-low heat (350℉). Lightly coat the surface with butter or oil.
  • Pour and cook. Scoop about ¼ cup of batter per pancake onto the hot skillet. Cook for 2-3 minutes, until the bubbles form across the surface and the outer edges look set.
  • Flip and finish cooking. Slide a wide spatula underneath and gently flip in one smooth motion. Cook the second side for 1-2 minutes, until golden brown. Flip each pancake only once, never press down with your spatula. Cook the rest of the batter the same way. Place cooked pancakes on a cooling rack.
  • Serve. Serve pancakes with warmed up maple syrup and a dollop of whipped butter.

Notes

To keep finished pancakes warm without getting soggy, place them in a single layer on a wire rack inside  a 200 oven while cooking the remaining batter. 
Once they cool down completely, store them in the fridge for up to 5-7 days.
