2tablespoonslight olive oil, vegetable oil or avocado oil
Instructions
Dice the chicken breasts into small ¼-inch pieces. You can par-freeze them for 30 minutes so it is easier to cut.
In a large bowl, add two eggs and whisk them briefly with a fork. Add diced chicken, 4 tablespoons of mayonnaise, 5 tablespoons of flour, 1 cup of cheese, dill, lemon zest, salt, and spices. Mix everything well until combined. Cover and place the fritters batter in the fridge for one hour or let it rest at room temperature for 15 minutes before frying.
Heat 2 tablespoon of oil in a large skillet. Using a spoon, drop small scoops of fritter batter into the hot skillet. Flatten each fritter slightly with the back of the spoon. Cook for 4minutes, flip, and cook for another 3to 4minutes, or until golden brown and the internal temperature reaches 165°F. Cook in batches.
Notes
Store the leftovers in an airtight container for up to 3 days. Chicken fritters freeze well for up to 2 months.
