These easy air fryer chicken fajitas are full of juicy chicken, charred peppers and onions. Ready in about 25 minutes, they are perfect for weeknight dinners, meal prep or when you want quick dinner without the stove. Serve with tortillas, rice or in a bowl.
Make the seasoning mix: In a small bowl, combine salt, sweet paprika, chili powder, garlic powder, onion powder, coriander, black pepper, dried oregano. 1 teaspoon salt, 1 Tablespoon paprika, ½ teaspoon chili powder, ½ teaspoon coriander, ½ teaspoon garlic powder, ½ teaspoon onion powder, ½ teaspoon black pepper, ½ teaspoon dried oregano.
Prep the ingredients: Slice chicken into thin strips. Cut onions and bell peppers in to the same size slices. Place chicken and vegetables into a large bowl. 1-1½ pounds boneless skinless chicken breast, ½ red bell pepper, ½ yellow bell pepper. 1 yellow onion.
Season the fajitas: Add the seasoning mix to the chicken and vegetables. Stir to coat. Add olive oil and lime juice. Stir again to combine. 2 Tablespoons olive oil, 1 tablespoon lime juice .
Cook the fajitas: Preheat the air fryer to 390℉ for 5 minutes. Add seasoned chicken and vegetables in a single layer (slight overlap is fine). Cook in batches if needed. Air fry for 15 minutes or until the chicken is fully cooked, stirring them half way through. The chicken is cooked when internal temperature reaches 165℉.
Serve: Enjoy with warm tortillas and your favorite toppings and/or side dishes.
Notes
You can also use store bought fajita or even taco seasoning, but I prefer homemade.If you like your fajitas a little spicy, add about ¼ teaspoons of cayenne pepper to the seasoning mix.This recipe also works with shrimp or beef.
