This roasted bone-in turkey breast recipe ensures tender and flavorful meat by using a dry brine first and then cooking it in the oven with fresh herbs, butter, and lemon until perfection. It is great for a simple dinner idea or a smaller holiday table when you do not want to cook the whole bird.

Instructions
Pat dry turkey breast. Rub it generously with the mix of 1 teaspoon salt, ½ teaspoon garlic powder, ½ teaspoon onion powder , ½ teaspoon black pepper , ¼ teaspoon ground coriander , ⅛ teaspoon nutmeg . Place it it the fridge for up to 2 hours uncovered.
Preheat oven to 375°F. Line a deep glass dish with some parchment paper.
Take out seasoned turkey and bring it to a room temperature. Coat it with softened butter.
Add fresh herbs at the bottom of the pan. Place turkey breast on top and add some lemon wedges there.
Bake turkey breast uncovered in the preheated to 375°F oven for about 50-90 minutes, depending on the size. The turkey is cooked when the juices run clear and the internal temperature reaches 165°F.
Let the turkey breast rest for about 5-10 minutes before cutting it, so the juices redistribute and the meat is more tender.
Notes
If you decide to brine turkey longer than 2 hours, make sure to cover it.It is better to take it out the fridge at least 20 minutes before baking to bring it to a room temperature. Depending on the size of the turkey breast, this recipe served 2-3 people.
