Instructions
Heat the olive oil in a heavy-bottomed pot or Dutch oven over medium heat. Add the chopped onion and sauté until translucent and softened, about 5 to 7 minutes. Stir in the minced garlic and grated ginger, cooking for an additional minute until highly fragrant.
Add the sliced carrots, diced parsnips, and broth to the pot. Bring the mixture to a gentle boil, then reduce the heat to low. Cover and simmer for 30 minutes, or until the vegetables are completely fork-tender.
Remove the pot from the heat. Carefully purée the mixture directly in the pot using a stainless steel immersion blender until perfectly smooth and velvety. (If using a standard countertop blender, allow the soup to cool slightly and blend in batches, ensuring the blender lid is vented to allow steam to escape.)
Stir the fresh lemon juice into the puréed soup to brighten the flavor profile. Taste and adjust the seasoning with salt and pepper as needed. Serve immediately.
Notes
Vitamix maximum safe temperature is 170°. Let the soup cool down before transferring to Vitamix container.
You can use stainless steel immersion blender instead.
