Enjoy these truffle oil sweet potato fries as an easy-to-make gourmet side dish or a snack. Hand-cut sweet potato fries are tossed in olive oil, sprinkled with salt, baked in the oven until crispy at the edges, and then, finished with truffle-infused oil.
Wash and peel sweet potatoes. Cut each potato in half lengthwise and then into ¼-1/2 inch thick fries.
Soak the fries in cold water for at least 30 minutes. Dry well using some cloth or paper towels.
Start preheating the oven to 425°F. Line the baking pan with a sheet of parchment paper.
In a medium bowl, add fries, 2 tablespoon olive oil, ½ teaspoon salt, ½ teaspoon dried thyme and ¼ teaspoon garlic powder. Mix to coat the fries.
Arrange the fries on parchment paper in a single layer without them touching each other or overlapping. Bake for 12 minutes. Flip the fries carefully using the fork and bake for another 12 minutes or until the fries are browned and the edges are crispy.
While the fries are still hot, drizzle them with a teaspoon of truffle oil. Sprinkle with grated Parmesan and extra salt if needed. Enjoy!
