Tips for baking with honey

- Honey is acidic, which is why many honey recipe will contain baking soda. Do not substitute or skip it unless the recipe says you can. Make sure your baking soda is fresh. .
- Use ¾ cup of honey for 1 cup of sugar, or see full guide on how to substitute honey for sugar.
- Bake with honey at lower temperatures, around 325-350℉, to prevent honey from burning
- Honey adds both sweetness and flavor to baked goods. You can use any type of honey for baking. Wild flower will add the most flavor.
- When possible, choose local and sustainably produced honey.

And last but not leas, Medovik. Medovik is a king of all honey bakes. This is easily my favorite cake of all times. Eight delicate, honey cake layers are stacked with a tangy sour cream and whipped cream frosting. The process is quite labor intensive, but the melt-in-your-mouth result is more than worth the effort. This is my family recipe I have been making for years. I think, everyone should try this cake at least once.
