Recipe At a Glance: Air Fryer Acorn Squash

    • Prep time: 15 minutes (slicing, seasoning, preheating air fryer).
    • Air Fryer Temperature: 380 °F
    • Prep Style: Halved or sliced into ½-inch half-moons for caramelized edges.
    • Equipment Needed: Air fryer (basket or oven style), chef's knife, cutting board, spoon.
    • Flavor and Texture: Sweet, buttery, nutty. Soft and creamy with crisped up skin.
    • Why Air Fryer Method: Cut the roasting time, no preheating needed.

    Ingredients

Labeled recipe ingredients on a white background.
    See recipe card for quantities.
    • Acorn squash: pick a heavy squash with green and orange colors. The skin should be dull and smooth, but not shiny.
    • Olive oil: I usually use extra virgin olive oil for cooking to roasting my veggies, but any vegetable oil can be used as well.
    • Salt: just a little bit of sea salt for the taste.
    • Nutmeg(optional): I love how nutmeg highlights acorn or butternut squash. You can use other spices and fresh or dried herbs.

    Realistic Recipe Timeline

    • Prep Time: 15 minutes
    • Cook Time (for ½inch half-moons): 12-15 minutes
    • Cook Time (for Halves): 20-25 minutes
    • Resting time: 2 minutes

Total start to plate time for halves 40 minutes, and 30 minutes for half-moons.

How to air fry acorn squash halves

    • Rinse a whole acorn squash to remove any dirt. Using a long sharp knife, carefully slice off the stem and root ends. Stabilize the squash on a cutting board. Cut it in half by working carefully with your knife down the squash until it splits in half. Using a large spoon, remove all the seeds and scrape off any strings.

    • Sprinkle it with a little bit of salt. Brush a layer of olive oil all over the cut side of the squash.
Two yellow squash halves are on a white cutting board facing the cut side down.
    • Place the acorn squash cut side down in the air fryer basket. Air fry at 380°F for about 15-20 minutes until it becomes golden brown and the flesh is fork tender.

Note: if using oven-style air fryers, you can cook both halves at the same time as they will fit the air fryer tray.

    • Flip the squash half and sprinkle with some nutmeg. Air fry at 380°F for another 5 minutes. Repeat the whole process with the second half. You can enjoy it as it is or scoop of the flesh for other recipes

Note: I add nutmeg (or any other spices or sweeteners) at the end to prevent it from tasting bitter and burnt.

    To make half-moons

    • Slice the acorn squash in half as shown above. Place each half cut-side down on the cutting board. Slice crosswise into uniform ½-inch thick half-moons.
    • Transfer to a mixing bowl. Drizzle with 1 tablespoon of oil and toss with kosher salt until every piece is coated.
    • Place the half-moons in the air fryer basket in a single layer, ensuring pieces do not overlap. (Air fry in two batches if using a smaller basket). Air fry at 380°F for 6 minutes.
    • Open the basket, flip each slice and air fry for an additional 6 to 9 minutes until the edges are deep golden-brown and the centers are fork tender. If you add nutmeg or sweet spices, sprinkle them over the squash during the final 3minutes of cooking.

    Recipe tips

    • If the squash skin is too tough to slice safely, pierce it a few times with a fork and microwave it whole on high for 1 to 2 minutes. This slightly softens the outer rind without cooking the interior, making it much easier and safer to cut.
    • Add ground nutmeg, cinnamon, or any glazes during the final 3 to 5 minutes of air frying. Adding ground spices too early can cause them to burn in the hot circulating air, creating a bitter flavor.
    • Cooking times will vary based on the thickness of your slices, the size of the squash, and your specific air fryer model (tested using a Ninja XL Air Fryer).

    How to use

    • Savory side dish: Serve hot alongside roasted turkey legs, chicken, or pork tenderloin.
    • Soups and sauces: Scoop and puree into creamy soup or velvety pasta sauces.
    • Fall baking: Mash the tender flesh to add natural moisture to quick breads. Try it in my chocolate chip acorn squash bread.

    How to store and reheat

    • Refrigerate: you can store cooked halves or scooped flesh in an airtight container for up to 3 days in the fridge.
    • Reheat: reheat it in the microwave or air fryer until steaming hot. Place cooked cold acorn squash halves in a glass container with a little bit of water at the bottom and reheat them in the oven at 375°F.
    • Freeze: you can turn the flesh of the squash into puree and freeze it for up to 3 months in freezer-safe bags.

    Frequently asked questions

How to select the best acorn squash?

Buy the acorn squash in season (summer-fall). Pick the heavy squash (not hollow), that has dark green dull skin with orange spots.

How to store raw acorn squash?

Store ripe acorn squash in a cool, dry place. It will last for about 1-2 months when stored properly. When I plan to cook it within a week, I simply store it on the kitchen counter.

Can you eat acorn squash skin and seeds?

Yes, both seeds and skin are safe to eat. The skin of acorn squash becomes softer after cooking and has a delicious taste.

    Notes

Safe cutting tip: If the outer rind is too hard to slice, pierce the skin 3-4 times with a fork and microwave the whole squash for 60-90 seconds to soften the skin.
Storage: Store cooled roasted squash in an airtight container in the refrigerator for up to 3-4 days.
Freezing: For longer storage, mash cooked flesh and freeze in sealed freezer bags for up to 3 months. Great for autumn soups, sauces, or bakes.
