Apple crepes are my fall favorite
Crepes always remind me of home, my mom always made them for us to enjoy with jams, sour cream, and honey. I often make classic crepes for my family, and these crepes roll-ups with Nutella to bring along for parties. I wanted to incorporate apples into the crepe batter. I have seen lot of apple cinnamon crepes recipes that have just an apple filling, but my recipe is different. I wanted to incorporate fresh apples and cinnamon into the crepes batter, just like I did with my fall pumpkin crepes. It took me a few tries to make them right. First, I did not peel the apple, and the skin was breaking the delicate crepes. Cubed apples did not work either, but grating them on a larger (coarse) side of the box grater was just right. I advise avoiding using a food processor or the fine shreds because the apple will release too much juice. These flavorful apple crepes are perfect for breakfast, a sweet snack, or even a dessert. These are all the ingredients you will need to make these apple crepes.

- Apples: any type of apple you have. You can even use a mix of different apples.
- Eggs: You will need only 2 large eggs for this recipe.
- Milk: I used whole milk. You can use low fat or plant base alternatives.
- Butter: You will need melted butter, or you can use vegetable or canola oil.
- Flour: I used all-purpose unbleached flour.
- Sugar: You will need granulated sugar.
- Vanilla extract: to make them even warmer.
- Spices: I used cinnamon and nutmeg. You can also add ginger, allspice to make them pumpkin spice.
- Salt: a little bit of salt added for balancing the taste.
How to make apple crepes

- Make the batter: Whisk eggs, sugar, salt, and vanilla. Add melted butter, then whisk in flour and warm milk until smooth. Let it rest for 10 minutes.
- Prep the apples: Peel and grate apples on the coarse side of a box grater so they don't release too much juice.
- Add flavor: Fold grated apples and cinnamon into the batter.
- Cook the crepes: Heat a nonstick or crepe pan, lightly grease, pour in a thin layer of batter, and swirl. Cook until golden, flip, and finish.
Recipe tips
- Warm up the milk in the microwave for 30 seconds.
- Cook crepes over low-medium heat so they do not burn.
- Let the batter rest at room temperature for at least 10 minutes
- If the batter is too thin and you have a hard time to swirl it into a thin circle, add a little bit more warm milk.

Apple Cinnamon Crepes (Made with Fresh Apples in the Batter!)
Equipment

- 1 Whisk
- 1 Box grater
- 1 ladle
- 1 crepe pan or non-stick 8 inch pan.
Ingredients
- 2 eggs room temperature
- 2 tablespoons granulated sugar
- ½ teaspoon vanilla extract
- ⅛ teaspoon salt
- 2 tablespoons, plus more for the pan butter, melted and cooled down
- 400 ml (about 1⅔ cups) milk, divided warmed up for 30 seconds in a microwave
- 1 cup all-purpose flour
- 1 large apple, peeled and cored
- ¼-½ teaspoons cinnamon
Instructions
- In a bowl, whisk eggs, sugar, salt, and vanilla. Gradually whisk in melted, cooled butter.2 eggs, 2 tablespoons granulated sugar , ½ teaspoon vanilla extract , ⅛ teaspoon salt, 2 tablespoons, melted and cooled down.
- Add flour and half the warm milk; whisk until smooth and lump-free. Whisk in the remaining milk until combined. Let batter rest 10-15 minutes.400 ml (about 1⅔ cups) milk, divided , 1 cup all-purpose flour
- Peel and grate the apples using the coarse side of a box grater. Fold grated apples and cinnamon into the batter.
- Heat a nonstick or crepe pan over medium heat and lightly grease with oil or butter. Pour in a ladle of batter, swirling to spread evenly. Cook 1-1½ minutes until golden, flip, and cook another minute. Stack the crepes on a plate. To keep crepes soft and pliable (not crispy at the edges), stack them on a plate and cover with another plate or foil while cooking the rest.
