    Perfectly Seasoned Air Fryer Breakfast Potatoes

    If you love potatoes, you need to try this air fryer breakfast potatoes recipe! Cubed potatoes are tossed in a homemade seasoning blend, coated in olive oil, and air-fried to crispy perfection in just 15 minutes. They come out golden and crispy on the outside, and soft and fluffy on the inside.

    For a hearty breakfast, try these potatoes with our air fry omelette and homemade chicken breakfast sausage.

    My special breakfast potato seasoning mix makes this dish bold and flavorful to go perfectly with bacon, sunny side eggs, omelettes, or quiche. It mimics the flavors of classic diner-style hash browns or home fries. The breakfast potatoes come out slightly smoky, garlicky, savory, and slightly earthy.

    • Potatoes: I like to use russet potatoes or Yukon gold potatoes for this recipe. If you have baby potatoes, simply slice them in half. 
    • Seasoning: you will need salt, sweet paprika, smoked paprika, garlic powder, onion powder, cumin, dried rosemary, and black pepper.
    • Oil: you can use olive oil, avocado oil, or vegetable oil.

    Step-by-step instructions

    Follow these easy steps with visuals on how to make crispy air fryer breakfast potatoes.

    Wash and peel the potatoes. Dry the potatoes well with paper towels so they come out crispy. Cube each potato into 1-inch cubes.

    In a large bowl, l add diced potatoes, salt, sweet paprika, smoked paprika, garlic powder, onion powder, cumin, dried rosemary, black pepper, and olive oil. Toss them until well coated.

    Preheat the air fryer to 400 degrees f. Add seasoned potatoes to the air fryer basket in a single layer. Air fryer for about 12 minutes, tossing the potatoes every 5 minutes. The potatoes are ready when they are golden brown and fork-tender. 

    Sprinkled cooked potatoes with fresh herbs if desired.

    Recipe tips

    • Cut the potatoes into the same size cubes so they cook evenly.
    • For best results, dry the potatoes with paper towels before tossing them in oil and seasonings.
    • Store leftovers in an airtight container in the fridge for up to 3-4 days.
    • You can use the leftovers to make breakfast burritos, breakfast tacos, loaded potato bowls, and more.

    Recipe variations

    • Garlic-Parmesan: toss cubed potatoes in garlic powder, and grated Parmesan before air frying.
    • Sweet and savory potatoes: season potatoes with cinnamon and a pinch of salt. Drizzle with maple syrup for serving. 
    • Herbed breakfast potatoes: season the potatoes with dried thyme, rosemary, and tarragon.
    • Country-style breakfast potatoes: with added diced bell peppers and onions. 

    Recipe frequently asked questions 

    Do I need to soak cubed potatoes in water before air frying them?

    No, it’s not necessary. I haven’t noticed a difference in crispiness after soaking. If you want them to be extra crispy, the key is to dry them well after washing and peeling. 

    What kind of potatoes are best for air frying?

    Russet, Yukon Gold, and red potatoes are best for air frying because they crisp up well and remain fluffy inside.

    Ingredients
      

    • 2 russet potatoes, washed and peeled
    • 2 teaspoons olive oil
    • ¼ teaspoons salt
    • ¼ teaspoons sweet paprika
    • ¼ teaspoons smoked paprika
    • ¼ teaspoons garlic powder
    • ¼ teaspoons onion powder
    • ¼ teaspoons dried rosemary
    • ¼ teaspoons cumin
    • ¼ teaspoons black pepper

    Instructions
     

    • Preheat air fryer to 400 for 5 minutes. Cube the potatoes into 1-inch even cubes.
    • In a bowl, add cubed potatoes 2 teaspoons olive oil, ¼ teaspoons salt, ¼ teaspoons sweet paprika, ¼ teaspoons smoked paprika, ¼ teaspoons garlic powder, ¼ teaspoons onion powder , ¼ teaspoons dried rosemary, ¼ teaspoons cumin, ¼ teaspoons black pepper. Toss the potatoes until well coated.
    • Transfer the potatoes to the preheated air fryer basket and spread them in a single layer. Air fry the potatoes for 12 minutes at 400°F, tossing them every 3 minutes. They potatoes are cooked when golden and crispy on the outside and fork tender inside.
    • Sprinkle cooked potatoes with fresh parsley or dill and serve with eggs, sausage or any other breakfast protein.

    Notes

    • Russet, Yukon Gold or red potatoes are the best for roasting in air fryer.
    • You do not to peel the potatoes if you prefer to keep the skin on.
    • You may vary depending on the size of potato cubes and type of the air fryer you are using.
