Wash and peel the potatoes. Dry the potatoes well with paper towels so they come out crispy. Cube each potato into 1-inch cubes.

In a large bowl, l add diced potatoes, salt, sweet paprika, smoked paprika, garlic powder, onion powder, cumin, dried rosemary, black pepper, and olive oil. Toss them until well coated.

Preheat the air fryer to 400 degrees f. Add seasoned potatoes to the air fryer basket in a single layer. Air fryer for about 12 minutes, tossing the potatoes every 5 minutes. The potatoes are ready when they are golden brown and fork-tender.
Sprinkled cooked potatoes with fresh herbs if desired.
