    Air Fryer Roasted Baby Potatoes

    This air fryer roasted baby potatoes are ready in just 20 minutes with only a handful of simple ingredients. Halved baby potatoes, tossed in olive oil, salt, and a little bit of my simple homemade seasoning mix, come out of the air fryer perfectly crispy on the outside, creamy and fluffy inside.

    I did not grow up making food in an air fryer, but I surely grew up eating a lot of potatoes ( and I mean a lot). 

    In Ukraine, my family used to grow them and they were one of our main vegetables, especially in winter. 

    Since I got my air fryer, I have learned how to use it to cook my favorite foods. It's fun, fast, and perfect for smaller servings.     • Efficiency: the air fryer cooks the potatoes faster and evenly.

    Ingredients (+ substitutions)

    Please, see the recipe card below for the ingredients' quantities.

    • Baby potatoes: You can use yellow, or red baby potatoes. They are also often called new potatoes. Substitutions: If you have regular potatoes, simply quarter them before air frying for the same results. You can also use fingerling potatoes.
    • Olive oil: I have always used olive oil for this recipe. Substitutions: You can also use avocado oil, or sunflower oil instead.
    • Seasonings: I used salt, paprika, garlic powder, onion powder, and black pepper. You can also add dried herbs, like oregano, dill, rosemary, and thyme. Substitutions: Try Cajun, Italian, or even taco seasoning, depending on the main dish you are serving them with.
    • Fresh herbs: my favorite part of the dish is to finish it with the finely chopped fresh herbs. I used chives, parsley, and thyme. You can skip the herbs.

    How to roast baby potatoes in air fryer

    Below are the step-by-step instructions on how to make this easy recipe. As always, I have included the process images for each step.

    Wash and scrub 1.5 pounds of baby potatoes. Dry them well with a clean kitchen towel or paper towels. Cut small potatoes in half and quarter the larger potatoes. Add them into a large bowl.

    In a small bowl, mix salt, paprika, garlic powder, onion powder and black pepper. Add olive oil and the homemade seasoning blend to the potatoes. Stir until they are evenly coated with the seasonings and oil.

    Preheat the air fryer for about 3-4 minutes. Add seasoned potatoes to the air fryer basket. Air fry at 400°F for about 16-20 minutes, shaking them briefly every 5 minutes.

    The potatoes are cooked when fork tender inside and browned on the outside. Transfer roasted potatoes to a serving dish and sprinkle them with some fresh chopped herbs before serving.

    Nataliia's tips and variations

    • Adjust the seasonings: some people love very well-seasoned potatoes and some like just a little bit. This recipe has a moderate amount of seasoning, which you can easily adjust to your liking. 
    • Cooking time: you may need more or less time to make them, depending on the size of the potatoes and the air fryer itself. 
    • Spicy: you can add a dash of cayenne pepper to make them spicy.
    • Parmesan: add about ¼ cup of grated Parmesan cheese to the potatoes before cooking them.
    • Add fresh garlic: you can also stir in a clove of grated fresh garlic into already cooked (but still hot) potatoes. Do not add the garlic before cooking, as it will burn fast. 

    Serving suggestions

    Most of the time we enjoy air fried potatoes for dinner with main dishes such as air fryer beef tips, baked spatchcock chicken, air fryer chicken drumsticks, roasted whole chicken, oven baked chicken tenders, air fryer crispy chicken tenders, baked salmon, roasted turkey legs, pulled barbecue chicken sandwiches and so much more. 

    They make a perfect side dish for any meal.

    And do not forget to add a green element to make it a complete meal, such as arugula salad or steamed broccoli for a complete meal. 

    But if you love potatoes as much as we do, try them also for breakfast with sausage, scrambled eggs, or this air fryer omelet. 

    As for condiments, I like to dip the potatoes in sour cream mixed with chives or this Greek yogurt sauce with fresh mint. 

    Storage instructions

    Transfer leftover potatoes into an airtight container and store them in the fridge for up to 3-4 days. 

    To reheat, pop them back into the air fryer for a couple of minutes or you can reheat them in the microwave. 

    You can also reheat them in the oven or stove top with a little oil.

    Frequently asked questions

    Why my air fried baby potatoes are not crispy? 

    The potatoes are not going to be crispy if you overcrowd the air fryer basket and also because of excess moisture. Make sure to dry them well after washing and do not forget to use a dry cutting board and the mixing bowls you are using. You can also try parboiling the potatoes before cooking to make them crispier. 

    Can I use regular-size potatoes to make this recipe? 

    Yes, you can use regular-size potatoes to make this recipe. To make them smaller, quarter each potato leaving the skin on. 

    How to make these baby potatoes in the oven?

    Preheat the oven to 400°F. Line the baking pan with the parchment paper. Arrange already halved and seasoned baby potatoes in a single layer in a preheated oven and bake them for about 30-40 minutes or until golden brown on the outside and tender on the inside.

    Ingredients
      

    • 1.5 pounds baby potatoes, washed and dried well
    • 2 tablespoons olive oil
    • ½ teaspoon salt
    • ½ teaspoon paprika
    • ¼ teaspoon garlic powder
    • ¼ teaspoon onion powder
    • ¼ teaspoon black pepper

    Instructions
     

    • Cut the baby potatoes in half. For larger ones, quarter them. Place them in a large bowl
    • In a small bowl, add salt, paprika, garlic powder, onion powder, and black pepper.
    • Add the seasoning mix, and oil to the potatoes. Mix until well coated.
    • Preheat the air fryer for 5 minutes to 400*F. Add seasoned baby potatoes to the air fryer basket. Air fry them for about 16-20 minutes at 400℉ (air fry setting), tossing them every 5 minutes. The potatoes are ready when golden brown on top and fork tender. Sprinkle them with fresh herbs and enjoy.

    Notes

    You can use regular size potatoes, by cutting them into 4-6 pieces first.
    You can roast the potatoes in batches to avoid overcrowding the air fryer.
