    My baked carrot chips feature sliced carrots, tossed in ghee, salt, spices, and herbs. They're versatile and can be served as a snack or a fun side dish.

    About the carrot chips recipe

    Since my husband is working on Saturdays, I stick to very simple lunches. Chicken tenders, pizza, mac and cheese, and so on. I also make a serving of veggies. It is usually raw or steamed veggies.

    To make things more versatile, one day I came up with this easy and delicious oven-baked carrot chips that kids actually enjoy.

    To make it fun, I cut my carrots with a crinkle cutter. You can slice them thinly with a knife, or mandoline slicer, or even buy already sliced carrot chips at the store. The store-bought sliced carrot chips will be much thicker.

    Thinly sliced carrot chips will be much crisper, but thicker chips are still my favorite for some reason.

    • Great french fries and potato chips alternative: I love to use these carrot chips in place of potato fries or chips.
    • Quick and easy: this recipe is very easy and takes only about 20 minutes to prepare. 

    Ingredients

    You can find the ingredients quantities in the recipe card at the end of this post. 

    • Carrots: Choose larger carrots for bigger chips. 
    • Ghee butter: it will give veggies a buttery taste but will not be burning like regular butter. You can also use olive oil or avocado oil.
    • Seasoning mix: I used salt, garlic powder, onion powder, black pepper, and Italian herbs. You can use any other seasonings you have at home.

    Step-by-step recipe directions

    Step 1. Wash the carrots well. Trim the ends and peel them with a vegetable peeler or scrape them with a knife. You can also leave the peel on. 

    Slice each carrot with a knife or a crinkle cutter under the angle to make the chips larger and oval. I cut them into half-inch thick chips, as I do not like to make them super thin.

    Step 2. In a large bowl, add carrot slices, salt, spices, and dried herbs. Melt ghee butter in a microwave and pour it into the bowl. Toss the carrots so they are evenly coated.

    Step 3. Line a large sheet pan with a parchment paper. Arrange carrot chips in a single layer. Bake them at 400 degrees f for about 20 minutes or until desired doneness. I like mine to have slightly crispy edges, but have a bite in the middle.

    Recipe tip

    If you like them to be more crispy, slice them into 1/16 to ⅛ inch thick chips.

    How to store and reheat

    Let them cool down at room temperature. Once cooled down, transfer carrot chips into an airtight container. I love to make a double batch to add them to my lunch box for the next day.

    They reheat well in a microwave, oven, or air fryer. 

    If, for some reason, you don't finish them within 3-5 days, you can freeze them for up to 2 months.

    Serving ideas as a side dish

    The natural sweetness of carrots pair well with so many main dishes and dipping sauces. 

    • Chicken: try them with air fryer crispy chicken tenders or baked chicken wings.
    • Turkey: enjoy them with some roasted turkey legs or turkey meatloaf.
    • Seafood: pair them with baked salmon, sea bass fillets, or shrimp.
    • Beef, pork or lamb: serve them with the meatloaf, pork chops or lamb chops.

    Seasonings variations 

    • Parmesan-herb carrot chips: sprinkle the carrot chips with some grated Parmesan cheese and dried rosemary, oregano, and parsley before baking.
    • Maple carrot chips: toss them in some maple syrup and a little bit of smoked paprika before baking. 
    • Za'atar-spiced carrot chips: use about ½ teaspoon of Za'atar spice blend for a tangy, and earthy flavor.
    • Everything bagel carrot chips: sprinkle them with everything bagel seasoning to give them a savory taste and crunchy texture. 

    Frequently asked questions

    Do I have to peel carrots?

    No, you don't have to peel the carrots; it's up to your preference. If you decide to leave the peel on, just make sure to wash them well.

    Can I cook carrot chips in the air fryer?

    Yes, you can cook carrot chips in the air fryer. It is a convenient method when you are making a small batch. Air fry them at 375°F for about 10-15 minutes, keeping a close eye on them as they can burn quickly in the air fryer.

    • 1 large bowl
    • 1 Baking pan

    Ingredients
      

    • 4 large carrots, washed, trimmed and peeled
    • 2 tablespoons melted ghee butter or olive oil
    • ½ teaspoon salt
    • 1 teaspoon dried Italian herbs
    • ¼ teaspoon garlic powder
    • ¼ teaspoon onion powder
    • ¼ teaspoon black pepper

    Instructions
     

    • With a knife or a crinkle cutter, cut the carrots into thin slices. Hold your knife at a slight angle (about 45 degrees) for the larger oval chips.
    • In a large bowl, add sliced carrot chips, 2 tablespoons melted ghee butter , ½ teaspoon salt. 1 teaspoon dried Italian herbs . ¼ teaspoon garlic powder. ¼ teaspoon onion powder. Toss until well coated. Ghee butter might slightly solidify if carrots are too cold.
    • Spread carrot chips on a prepared baking pan and bake them for about 20 minutes or until the edges look crispy.

    Notes

    You can slice carrots into thicker or thinner chips, depending on your liking. 
    You can use any seasoning you like. Add a pinch of cayenne pepper for spicy chips.
    Store them in airtight container for up to 3-4 days in the fridge.
