About the carrot chips recipe
Since my husband is working on Saturdays, I stick to very simple lunches. Chicken tenders, pizza, mac and cheese, and so on. I also make a serving of veggies. It is usually raw or steamed veggies.
To make things more versatile, one day I came up with this easy and delicious oven-baked carrot chips that kids actually enjoy.
To make it fun, I cut my carrots with a crinkle cutter. You can slice them thinly with a knife, or mandoline slicer, or even buy already sliced carrot chips at the store. The store-bought sliced carrot chips will be much thicker.
Thinly sliced carrot chips will be much crisper, but thicker chips are still my favorite for some reason.

- Carrots: Choose larger carrots for bigger chips.
- Ghee butter: it will give veggies a buttery taste but will not be burning like regular butter. You can also use olive oil or avocado oil.
- Seasoning mix: I used salt, garlic powder, onion powder, black pepper, and Italian herbs. You can use any other seasonings you have at home.

Step-by-step recipe directions
Step 1. Wash the carrots well. Trim the ends and peel them with a vegetable peeler or scrape them with a knife. You can also leave the peel on.
Slice each carrot with a knife or a crinkle cutter under the angle to make the chips larger and oval. I cut them into half-inch thick chips, as I do not like to make them super thin.

Step 2. In a large bowl, add carrot slices, salt, spices, and dried herbs. Melt ghee butter in a microwave and pour it into the bowl. Toss the carrots so they are evenly coated.

Step 3. Line a large sheet pan with a parchment paper. Arrange carrot chips in a single layer. Bake them at 400 degrees f for about 20 minutes or until desired doneness. I like mine to have slightly crispy edges, but have a bite in the middle.

Recipe tip
If you like them to be more crispy, slice them into 1/16 to ⅛ inch thick chips.
How to store and reheat
Let them cool down at room temperature. Once cooled down, transfer carrot chips into an airtight container. I love to make a double batch to add them to my lunch box for the next day.
They reheat well in a microwave, oven, or air fryer.
If, for some reason, you don't finish them within 3-5 days, you can freeze them for up to 2 months.
Serving ideas as a side dish
The natural sweetness of carrots pair well with so many main dishes and dipping sauces.
- Chicken: try them with air fryer crispy chicken tenders or baked chicken wings.
- Turkey: enjoy them with some roasted turkey legs or turkey meatloaf.
- Seafood: pair them with baked salmon, sea bass fillets, or shrimp.
- Beef, pork or lamb: serve them with the meatloaf, pork chops or lamb chops.

- Parmesan-herb carrot chips: sprinkle the carrot chips with some grated Parmesan cheese and dried rosemary, oregano, and parsley before baking.
- Maple carrot chips: toss them in some maple syrup and a little bit of smoked paprika before baking.

Baked Carrot Chips
Equipment
- 1 large bowl

Ingredients
- 4 large carrots, washed, trimmed and peeled
- 2 tablespoons melted ghee butter or olive oil
- ½ teaspoon salt
- 1 teaspoon dried Italian herbs
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon black pepper
Instructions
- With a knife or a crinkle cutter, cut the carrots into thin slices. Hold your knife at a slight angle (about 45 degrees) for the larger oval chips.
- In a large bowl, add sliced carrot chips, 2 tablespoons melted ghee butter , ½ teaspoon salt. 1 teaspoon dried Italian herbs . ¼ teaspoon garlic powder. ¼ teaspoon onion powder. Toss until well coated. Ghee butter might slightly solidify if carrots are too cold.
- Spread carrot chips on a prepared baking pan and bake them for about 20 minutes or until the edges look crispy.
